Yield: 2 Servings
8-10 oz raw cubes chicken
6-8oz medium shrimp
2 slice turkey bacon
1/2 each small green & red bell pepper, sliced (julienned) thin
2 raw zucchini – spiral cut into noodles
3 scallions thinly sliced and divided
Optional: a handful of julienned carrots
1.5 tsp olive oil
3 tbsp lite ranch dressing
1.5 tsp Cajun seasoning
1 tbsp Parmesan cheese
Season chicken with 1/2 teaspoon Cajun seasoning, season shrimp with 1/2 teaspoon Cajun seasoning.
In a large saucepan, over medium-high heat, add oil.
- Add chicken and cook thoroughly, set-aside.
- Add bacon and cook until slightly brown and begins to stick to the pan.
With bacon in a pan add half the scallions and the bell peppers. Sauté using the juices to deglaze the bottom of the pan (to deglaze, use the liquid now in the pan and scrape the light brown bits off the pan and incorporate into mixture)
When bell peppers are tender, add zucchini noodles until tender.
Add chicken, shrimp, ranch dressing, the remaining 1/2 Cajun seasoning, and cook until heated through. Remove from heat add the other half scallions and Parmesan cheese.
